Prepare the Green Pea Mixture
In a mixer grinder, add 1 cup of green peas.
Grind the peas coarsely without adding water; you can also chop them finely in a chopper. The goal is a thick, coarse texture, not a thin paste.
Transfer the ground peas to a bowl and set aside.
Blend Potatoes with Aromatics
Add the two roughly chopped raw potatoes into the mixer grinder. If the quantity is too much, blend in two batches.
Add the three green chillies, half-inch ginger, 8-9 cloves of garlic, and one onion.
Blend everything without adding water until you get a smooth paste.
Cook the Base Mixture
Measure the blended potato mixture (it should be about two cups) and transfer it to a large cooking pot.
Add one cup of water to the pot.
Place the pot on the stove over a slow flame, stirring continuously.
Once it starts to cook slightly, add the coarsely ground green peas.
Add one teaspoon of white sesame seeds and salt to taste.
Mix well and cook for about 2 minutes until all ingredients are combined and slightly thickened.
Incorporate Rava and Rice Flour for Dough
Gradually add one cup of Rava (Sooji) to the mixture while continuously stirring to prevent lumps.
Continue to mix until the Rava is well incorporated.
Now, add half a cup of rice flour and continue to mix until the mixture forms a cohesive dough. If you don't have rice flour, use an additional half cup of Rava (total 1.5 cups Rava).
Ensure the dough is not too hard or too soft.
Cool and Season the Dough
Transfer the prepared dough to a large plate and spread it out.
Allow the dough to cool slightly until it's warm enough to handle comfortably.
Add one tablespoon of pizza seasoning, one teaspoon of red chilli powder, and fresh coriander leaves.
Mix all the seasonings thoroughly into the dough until well combined.
Shape the Aloo Matar Donuts
Lightly grease your hands with oil.
Take a portion of the dough and roll it into a round shape.
Press it slightly to flatten it into a disc.
Sprinkle some white sesame seeds on top and gently press them into the donut.
Create a hole in the center using your finger or a small round object to form the classic donut shape.
Place the shaped donut on a plate and repeat the process for the remaining dough.
Store or Fry the Donuts
At this stage, you can store the raw donuts in an airtight container or plastic bag in the freezer for months.
To fry, heat oil in a pan until it's hot but not smoking. The oil should not be too cold or too hot.
Carefully place the donuts into the hot oil.
Flip them frequently and fry until they turn golden brown and crispy on both sides.
Once fried, remove them from the oil and place them on a paper towel to drain excess oil.
Serve and Enjoy
Serve the hot, crispy Aloo Matar Donuts with chutney, tea, or enjoy them plain.
