Prepare the Spinach Puree

Wash and roughly chop 400g of spinach. Boil water in a pan, add 1 tsp sugar and salt, then add the chopped spinach and boil for 2 minutes until it comes to a boil. Immediately transfer the boiled spinach to very cold water to stop the cooking process and preserve its color. Once cooled, blend the spinach in a mixer jar without adding any water to create a smooth puree.

Prepare the Suji Dough

Take 2 cups of semolina (suji), whether coarse or fine. Grind the semolina into a fine powder in a mixer, doing it in batches if necessary. Transfer the powdered semolina to a large bowl, add salt to taste, and ยผ cup of oil. Mix thoroughly until the oil is well incorporated with the semolina.

Combine and Knead the Dough

Add the prepared spinach puree to the semolina and oil mixture. Mix and knead to form a dough that is neither too hard nor too soft. Cover the dough and let it rest for 10-15 minutes to set.

Prepare the Nacho Masala

In a mixer, combine 3 packets of Maggi masala, 1 tbsp sugar, 1 tbsp Kashmiri red chili powder, 1 tbsp dry mango powder (amchur), 1 tbsp chaat masala, and a little salt. Grind all ingredients into a fine powder to make the flavorful nacho masala.

Roll and Cut the Nachos

After the dough has rested, knead it lightly again and divide it into large portions, slightly bigger than those for rotis. Roll out each portion very thinly, as thin as possible. Spread the rolled dough on a plate or tray. Cut the dough into triangular shapes, similar to market-style nachos.

Fry the Nachos

Heat oil in a pan until it is thoroughly hot. Add the cut nacho chips to the hot oil. Reduce the flame to low to medium and fry the nachos until they are perfectly crispy and puffed up. Once crispy, remove the nachos from the oil and place them in a bowl.

Season and Serve

Immediately after frying, while the nachos are still hot, add about two spoonfuls of the prepared nacho masala over them. Mix well so the masala coats the nachos evenly. Continue this process for all batches. Serve the crispy, flavorful, Doritos-style spinach nachos.
