De-skin the Chickpeas
Take the roasted chickpeas in a tray and rub them vigorously with your hands to remove the outer skins. Pass them through a large sieve to separate the skins from the chickpeas.
Lightly Roast Chickpeas
Place the cleaned chickpeas in a pan over medium heat and roast for a few minutes. This ensures they grind into a fine powder and removes any moisture.
Roast the Spices
In the same pan, roast the cumin seeds, black pepper, and dry red chillies until fragrant. Add the dry mint leaves towards the end and roast briefly.
Grind into Premix
Let all ingredients cool down completely. Transfer them to a blender and add the black salt and white salt. Blend until you achieve a fine powder consistency.
Sattu Drink - Prepare the Base
In a glass or jug, add 1 tablespoon of your prepared Sattu Premix per serving (4:26). Add a little water first and mix thoroughly to form a smooth paste and avoid lumps.
Sattu Drink - Add Liquid and Mix
Pour in the remaining cold water and stir well.
Sattu Drink - Add Flavor Enhancers
Mix in finely chopped onion, fresh coriander leaves, and the juice of a lemon for a refreshing twist.
Sattu Drink - Serve Cold
Add ice cubes and serve immediately.
