Prep the Cooling Agents

Gond Katira: Soak 1 teaspoon of Gond Katira in 2 cups of water overnight or for 7-8 hours until it swells and becomes jelly-like.
Chia Seeds: Soak 2 tablespoons of Sabja seeds (Chia seeds) in 1 cup of water for 10-15 minutes until they bloom.

Prepare the Watermelon

Finely chop 2 cups of fresh watermelon. The speaker recommends keeping the seeds in, as they will naturally separate when chopped finely.

Mix the Refreshing Drink

In a large pitcher or bowl, add the soaked Gond Katira, soaked Chia seeds, and the chopped watermelon.
Pour in 1 litre of cold milk.
Add 1/2 cup of rose syrup (or Rooh Afza) for that signature Mohabbat-e-Sharbat flavor and color.
Mix everything well. Adjust sweetness by adding more syrup if needed, aiming for a light, refreshing taste.
