The Grinding Process
Transfer your dry mixture into a grinder. Crucial Tip: Use a pulse setting to maintain a coarse texture. Do not grind into a fine powder, as the slight crunch adds to the traditional, authentic texture of the laddus.
Roasting for Flavor
Heat one tablespoon of ghee in a pan. Add your ground mixture and roast for 5โ7 minutes on low-medium heat. Towards the end, fold in the desiccated coconut. Keep stirring until a rich, nutty aroma releases. Remove from heat and mix in black pepper and cardamom powder.
The Mishri Syrup Base
Crush the Dhaga Mishri (thread rock sugar) into smaller pieces. Add to a pan with 3/4 cup of water. Heat until the syrup reaches a sticky consistencyโavoid boiling it into a one-string syrup, as you only need enough to bind the ingredients effectively.
Binding & Shaping
Gradually fold the warm syrup into your dry mixture. Mix thoroughly until the binder is evenly distributed. While the mixture is still warm, shape them into medium-sized laddus using your palms. If preferred, you can spread the mix into a tray to set and cut into healthy burfi squares.
Final Storage
Allow the laddus to cool completely. Store them in an airtight container. These can last up to one month, making them an ideal, quick snack for when your energy levels drop during the summer heat.
