Roast Sabudana and Peanuts

Lightly dry roast the sabudana and roasted peanuts in a pan for about 1 minute. This ensures they are warm enough to grind properly without fully cooking them.

Grind the Mixture

Let the mixture cool slightly, then transfer to a blender. Grind it into a coarse powder. It should not be a fine powder, as a little texture helps the nuggets hold together and stay crispy.

Prepare the Dough

In a large bowl, mix the ground sabudana, grated boiled potatoes, green chillies, cumin seeds, black pepper powder, sendha namak (rock salt), and fresh coriander. Mash and bind everything together to form a firm dough.

Shape the Nuggets

Grease your hands with a little ghee and shape the dough into small, elongated nuggets or any shape you prefer. These can be made in advance and stored.

Steam for Soft Texture

Grease a steamer plate with ghee and arrange the nuggets on it. Steam them for 10 to 12 minutes. This step makes them soft on the inside while cooking them thoroughly without oil.

Toast without Oil

For added crispiness, heat 1 tbsp of ghee in a pan with cumin seeds and a green chilli. Place the steamed nuggets in the pan and toast them on both sides until golden brown. Serve hot with your favorite chutney!
