Preparation & Ingredients
Get ready by gathering potatoes (red or new potatoes work best).
You will also need spices: black salt (1/2 tsp), white salt (1/2 tsp), sugar (1 tsp), dry mango powder/amchur (1 tsp), Kashmiri red chilli powder (2 tsp), and chaat masala (1 tsp).

Making the Spicy Chips Masala
Combine the salt, sugar, amchur, chaat masala, and Kashmiri red chilli powder in a mixer jar.
Blend them together until you have a smooth, aromatic spice powder. Set this aside for seasoning the final chips.
Peel & Slice Potatoes
Peel your potatoes thoroughly.
Use a chip slicer or grater to cut the potatoes into uniform, thin slices—neither too thick nor too thin.
Place the slices on a clean, dry cloth and pat them dry to remove excess moisture. Do not boil or wash the slices after cutting; simply drying them is enough to keep them crisp.
Frying the Crispy Chips
Heat oil in a pan on medium flame.
Once the oil is hot, carefully add the potato slices in batches.
Fry them while flipping occasionally until they turn a nice reddish-golden color and become perfectly crunchy.
Final Seasoning & Serving
Once fried, transfer the hot chips to a bowl.
Sprinkle your prepared homemade spice blend over the chips while they are still warm so the flavor coats them perfectly. Toss well and enjoy your fresh, healthy snacks!
