Boil Chana Dal

Combine 1/2 cup soaked chana dal with 1 cup water and salt in a pressure cooker. Cook on medium flame for three whistles until the dal is soft and easily mashed.

Prepare Stuffing

Heat 1 tablespoon of oil in a pan. Add hing, cumin seeds, chopped green chilies, and ginger, frying on a slow flame. Add the boiled chana dal, dry mango powder, salt, and all other spices, mixing well until the dal is dry and thoroughly cooked. Stir in fresh green coriander and let it cool. Once cool, form small balls from the dal stuffing.

Prepare Tikki Dough

Grate 4 boiled potatoes using a coarse grater. Add salt, cornflour, and rice flour (gradually, in 2-3 additions) to the grated potatoes. Mix thoroughly to form a soft, dough-like consistency.

Shape Tikki

Grease your hands with a little oil. Take a small portion of the potato dough, flatten it into a disc, and place a chana dal stuffing ball in the center. Seal the edges completely to enclose the stuffing, then gently flatten it to give it the shape of a tikki. Repeat for the remaining dough and stuffing.

Roast Tikki

Heat a small amount of oil in a pan. Place the tikkis in the pan and roast them on medium flame until both sides are crispy and golden brown. Remove onto a tissue paper to absorb excess oil.
